Fish stew is a great option when you feel like cooking something warm and comforting, but you need to have dinner on the table in a matter of minutes.

A big bowl of steaming tomato stew with pieces of flaky fish and tender prawns, and a big chunk of warm bread, is the perfect meal to enjoy on cold and rainy evening.

This stew is simple, delicious, quick and very healthy.

Seafood stew

Simply combine tinned tomatoes, stock, white wine with some garlic and chopped capsicum, and bring the sauce to a simmer. Add a little chilli and paprika if you want some extra spice.

While the sauce is heating up, prepare the fish. You can use any fresh seafood, simply slice it into bite sized pieces. I used salmon, ling, prawns and squid. If you want a really quick meal, a seafood marinara mix would be a perfect.

When the sauce is simmering, throw the seafood into the tomato sauce, along with a tin of cannellini beans. When all the seafood is cooked and tender, add some fresh parsley, cracked pepper and a squeeze of lemon juice.

Serve steaming hot in a big bowl with a chunk of hot and crusty bread.

    • Thanks! Yep, it worked really well, and was great for a cold and windy night. There were no frozen squid hoods in the supermarket, so I had to cheat and buy pre-cut squid, which turned out a bit rubbery. But the prawns and fish were really tender.
